Just found this article in Consumer Reports on How to Pick Fresh Eggs.

  1. They might be ok to eat after three weeks, but that's a good time to hard boil them, the yolkwill be very flat if you fry them and they certainly won't taste that fresh. Store bought eggs could be as old as 1-2 weeks by the time you buy them. Buy local fresh eggs for the best flavor. Eggs picked right from the coop are awesome.

  4. If refrigerated, a chicken egg is good for up to 3 months. If not, it's good for a month. (in the UK, and many other parts of the world, eggs are not refrigerated) A fresh eggs will sink in water... old eggs float. Be wary of the eggs on "special" at the grocery... they're starting to approach that three month mark...
